Butter-Almond Cake

In the pan, fresh out of the oven

I have never been much of a baker, always equating baking to chemistry and preferring the ability to improvise while cooking on the stovetop or the grill/smoker. However, I have been seeking a nice snack item that would pair well with a cup of tea. I never knew exactly what I wanted, so I tried a variety of cookies, muffins and even toast. None of them were what I was looking for, so I kept trying. When I saw a photo of this cake, I thought it had potential.

What I discovered is a rich, buttery flavor that isn’t too sweet. The texture of the cake is soft and moist, almost spongy. The glaze enhances the sweetness and its almonds  provide a satisfying crunch. This cake looks classy and will bring a bit of decadence to your next afternoon tea.
